Look at these two glasses. The first one — we stirred salt into water. The second one — vinegar plus baking soda, fizzing like a tiny volcano. Both of them involve combining two things. But one of them is totally different from the other on the inside. Can you guess which?

First — salt and water. Drop the crystals in. They break apart into sodium and chloride ions. Water molecules surround them and float them around. But here's the trick — those ions are still salt. The water molecules are still water. Nothing new was made. It's just mingling.

Here's the test. Heat the salt water. The water boils off as steam — and look — the salt is right there at the bottom, crystals and all. We got our salt back. If a chemical reaction had happened, we couldn't do that. Mixtures can be unmixed. That's the rule.

Now the other glass. Vinegar plus baking soda. The hydrogen from the vinegar meets the bicarbonate from the soda — and atoms rearrange. Out comes carbon dioxide gas — that's the fizz — plus water plus sodium acetate. Brand new molecules. The CO₂ floats away. You can’t evaporate vinegar back out of this. Chemistry happened.

Even just MIXING comes in three flavors. A solution — like sugar water — particles so tiny they basically vanish. Uniform everywhere. A suspension — like sand and water — big particles, you can see them, they settle to the bottom. And a colloid — like milk — tiny particles dancing forever in water. Looks smooth, but zoom in and you’ll see them.

So here’s the whole picture. Mixing is hanging out — molecules together but unchanged, and you can usually pull them back apart. Evaporate, filter, use a magnet. Reacting is changing partners — bonds break, new molecules form, you can’t easily reverse it. Mixing is hanging out. Reacting is changing partners.
